Study of Quality Factor (Q) and Phase Angle (θ) obtained per electrical impedance to characterization and detection adulteration in honey.

The quality control of honey is very important for the food industry and final consumer. Honey has constantly been target adulteration, usually with aim illegally increasing profit. However, analytical methods used in fraud investigation sometimes are complex beyond time-consuming. Electrical measurements appear as a good alternative to traditional analysis due its practicality low costs. In order show applicability some electrical parameters derived from impedance technique analysis, present study, samples were purposefully adulterated syrup simulate adulteration conditions. Then, they submitted frequency scanned 10 Hz 2 MHz. module (Z), phase angle factor (Q) data collected studied. results showed that there linear correlation between frequencies relative peaks Q adulterant concentration coefficient determination ~0.992. proposal use property be methodologies main contribution this since it traditionally little mentioned literature.
